Gently kissed with spice and pleasingly pumpkin-y, these cookies boast a tender, cake-like texture and are simply scrumptious. Try serving with Spiced Pumpkin Ice Cream (refer to Bonus Section) for a special treat Variations:
Pure, premium maple lends its distinctive, earthy sweetness to these little cakes that may be mini in stature but are mighty on taste. True blue maple lover? Pair with Maple Pecan Ice Cream (refer to Bonus Section) for the ultimate in mapley desserts. Variations:
Call it a milk chocolate and hazelnut panna cotta if you prefer, but Nutella - essentially a chocolate hazelnut spread - is the everyday secret to this extraordinary pudding; only you need know it! Lovely accompanied by something crisp, such as the Classic Gingersnaps (refer to Bonus Section). Bonus Recipes with Extra Recipes, Ideas & Serving Suggestions
5) Spiced Pumpkin Ice Cream
All the savour of an awesome pumpkin pie churned into a sumptuous ice cream. 6) Maple Pecan Ice Cream The deeply nutty, toasty flavour of great maple syrup really enhances that of pecans. (3hrs 30mins) Retail Shop & Office Hours: 10.00am to 8.30pm Demo + Comprehensive 15-Page Recipe Pack + Food Tasting + Take-Home Box of 4 Baked Treats Difficulty Rating:2/5

Christmas is a-coming, and with it many occasions to gather with family and friends around laden festive tables! Be inspired to bake up an aromatic storm and give your loved ones a treat with these pie and tart recipes.
Demo + Food Tasting + Comprehensive Recipe Pack + Take-Home Box
1) Sweet Pie Crust - Master Recipe
A buttery, flaky and very lightly sweetened shortcrust pastry, suitable for all kinds of sweet tarts and pies. 2) 'Rumpkin' Pie A classic American-style pie combining the heady flavours of roasted pumpkin and dark rum! The crust cradles a smooth pumpkin custard spiked with Myer's rum, brown sugar and a hint of spice. 3) Chocolate Nut Tart with Brandied Banana Salsa Pecans, walnuts and macadamias nestle in a silky filling that is rich and intense but not too sweet, thanks to Valrhona cocoa powder. Brandy-marinated bananas add a fresh, harmonious element. Baked in a tray and cut into squares, this is a simple but elegant dessert great for Christmas parties and potlucks. 4) 'Deconstructed' Mince Pies English mince pies are delicious to eat, but fiddly to make, especially in hot weather. Here's an alternative - leaf-shaped shortcrust cookies simply topped with warm home-made mincemeat (brandy-spiked dried fruit preserve) and served with almond-flavoured whipped cream. 5) Japanese Bakewell Tart The traditional English tart transformed with winter flavours and a Japanese makeover! In the tart shell are chunky red bean paste and sweetened chestnut puree, topped with a layer of rich sponge cake flavoured with kinako, toasted soybean powder. Perfect with a cup of oolong or green tea. Bonus Recipes
(For you to try at home):
6) Eggnog Custard Tart in a Cinnamon Crust
Rich, bourbon-spiked egg custard baked in a cinnamon pastry shell, dusted with an aromatic sprinkling of nutmeg. 7) Mincemeat & Marzipan Turnovers A luscious mixture of mincemeat and diced marzipan baked in ready-rolled puff pastry - a speedy, handy dessert you can whip up easily if you have mincemeat in the fridge. 8) Bourbon Caramel Butter A variation of English brandy butter: a creamed sauce of butter, bourbon, vanilla and brown sugar, for serving with mince pies and Christmas pudding. Very decadent, but then Christmas comes but once a year! 9) Mulled Cranberry Cider A warm festive drink of apple cider and cranberry juice infused with sweet and fragrant spices, a soothing digestif after you've enjoyed all your pies. |

Also, learn how to cut out decorative shapes to adorn your pies. 2) Saumon en Croute Salmon fillet and sautéed mushrooms wrapped up into a puff pastry parcel and baked until fragrant and meltingly tender, served with a creamy onion and dill sauce. A lovely centerpiece dish for Christmas entertaining, a fabulous substitute for non-meat eaters. 3) Curry Debal Pie There's no better way to use up a surfeit of Christmas meats - chicken, turkey, ham - than to turn them into a classic Eurasian curry debal, with a spicy, mouthwateringly aromatic gravy. Well, perhaps one better way: make a curry debal and bake it into a lavish pie topped with puff pastry! 4) Banketstaaf A log cake with a difference! This very traditional Dutch Christmas pastry wraps up a rich lemon-scented almond paste in puff pastry and bakes it into a golden log. A treat at any time of the year, especially for teatime. Bonus Recipes
(For you to try at home):
5) Coques aux Bananes et Noisettes
Puff pastry rounds baked into little golden pillows, split in half, then sandwiched back together with sliced bananas and whipped hazelnut ganache made with Nutella, dark chocolate and cream. 6) Spicy Sausage Rolls Home-made sausagemeat with a hint of lemongrass, garlic and chilli, rolled up in puff pastry coats to make delicious little snacks - so much better and more unusual than bought! 7) Potato & Cheese Galettes Individual tarts that can be made canape-sized or appetiser-sized, topped with potato slices, onions and crumbled white cheese, and baked until golden. 8) Cheese & Sesame Straws What do you do with the little trimmings and bits of puff pastry left over from cutting out puff pastry shapes? Mix them with grated Parmesan and roasted sesame seeds and bake up deliciously crispy cheese straws, of course! |
