INTERMEDIATE PASTRY: CHOCOLATE, CARAMEL & COFFEE

Sacher Sponge, Basic Meringue, Chocolate Mousse, Pailleté Feuilletine & Praline Base, Basic Choux, Crème Patisserie, Caramelisation
Product Knowledge & Understanding:

Sumatra Cakes:
Valrhona dark & white chocolate with an aromatic Sumatra coffee flavour - an unpublished recipe
Valrhona Jivara Mousse Cake: Valrhona milk chocolate mousse with a Jivara crunch, includes the following components: Sacher sponge + basic meringue for sponge + Jivara mousse + Jivara crunch. ('Just Desserts' pg 72-73)
Caramel Éclair:
